Although you may all want brand new top-of-the-line restaurant equipment that will service the multitudes, you must regard the cost. When considering cost, don’t just think of the initial purchase cost; you must also weigh in the operating and maintenance costs of equipment. Consider the dishwasher: it costs a lot more to operate a dishwasher that will wash a hundred dishes at a time verses a dishwasher that will wash twenty-five dishes at a time. While the new European model may wash your dishes in 25 seconds, who will service the model when it breaks down? What does your operation really need? How much is too much?
You must also consider the replacement cost of items and the durability. If you own a coffee shop, how much does it cost to serve out of ceramic mugs verses serving out of paper cups? What is the image difference in doing so? The two-dollar ceramic mug may chip and crack or stain more easily than the five-dollar mug. Or the five-dollar mug may offer no difference at all. Will both be available for replacement, or will you have to switch to something new a few months down the road?
Another determination you need to make is whether you wish to buy used or new restaurant supplies. While much of the used equipment can offer you significant savings in initial cost, they may need servicing much more often than new restaurant equipment. Regardless of the size of your business, the restaurant equipment you choose and the way you choose to purchase it will have a direct effect on your bottom line. Make sure you consider wisely!
